
Grilled Mahi Mahi With Avocado-Chile Salsa
1 ripe avocado, cut into ¼- ½ inch chunks
2 plum tomatoes, cut into ½ inch chunks
1 C minced red onion
1 jalapeno pepper, seeded and minced
½ C minced fresh cilantro
1 lime, juiced
½ tsp salt
Combine all ingredients in a large bowl, and mix gently with a spoon. Set aside. You can store this in a covered container for a few hours before serving.
For the mahi mahi:
1 ½ pounds mahi mahi, or any white fish, cut into 4 pieces
1 T extra virgin olive oil
1 lime, juiced
½ tsp salt
½ tsp pepper
In a deep dish marinate the fish with the other ingredients for 20-30 minutes before grilling.
Grill or cook under a broiler 6-8 minutes per side or until flakes easily with a fork.
Serve the fish with the salsa on top.
